Overnight Crock-Pot Oatmeal

As part of the Make Over Your Mornings class that I’ve been doing I’ve been trying to be a little bit more purposeful and really plan ahead what our family will eat for breakfast the night before.  I mean there is nothing wrong with throwing a bowl of cold cereal out there for them to eat - and we do that a lot.  But sometimes it’s nice to throw in something different for everyone. And  I feel so much better going to bed at night knowing I already have breakfast planned out in my head.  

We have a couple different make-ahead breakfast options that really work well for our family Our favorite go-to easy recipes include a lot of freezer meal options – like muffins, breakfast burritos, smoothies and waffles or pancakes.  But I’ve never tried an overnight oatmeal until this week.

I found this recipe from Once a Month Meals on Pinterest and thought it looked simple enough. Although I did make a few changes.  (raisins instead of nuts and coconut oil instead of butter)

Overnight Crock Pot Maple and Brown Sugar Oatmeal

  • ¼ cups Maple Syrup
  • 2 cups Steel Cut Oats
  • ⅓ cups Brown Sugar
  • ½ teaspoons Salt
  • 3 tablespoons  Coconut Oil
  • 1 teaspoon Cinnamon
  • 1/2 cup or so of raisins
  • 6 cups Water 

Spray crock pot with cooking spray.  Add all ingredients and stir.  Cook on low for 7-8 hours and stir before eating.  

Most of the kids really enjoyed this recipe.  Even my husband ate a small bowl (he normally doesn’t eat any breakfast). We topped ours with more syrup and raisins.  The kids love raisins! The recipe says it will make six servings – I have to say 6 BIG servings.  This made a lot of oatmeal!  Also I think you need to really know your crock pot I tend to think mine cooks on the faster side.  I made mine up at 9 the night before.  I was up in the middle of the night with different kids so I did stir it a couple times we well, but it competently ready at 4:30.  Which is right around  7-8 hours.  So I guess I really should have started it later?  I’ll have to figure out some timing when I make it again.  I think next time I’l want to try an apple flavored kind.
